Recipe Corner - Laura's Raw Chocolate Mousse
So I have a very sweet tooth, which is a bit of a downfall when it comes to eating healthier (I can never resist anything chocolately if it's going) so when I came across this Raw Chocolate Mousse recipe which is packed full of health benefits but still just as chocolately I couldn't pass it up.
Ingredients for Raw Chocolate Mousse
2-3 Avocados (these have to be ripe or just a smidge over ripe) Honey (preferably raw) Cacao Powder (again I used raw but you can use normal cocoa powder) Coconut oil
Method for making Raw Chocolate Mousse
Scoop the flesh out of the avocado, if they are ripe this should be a doddle, place into a food processor along with the 3-4 table spoons of cacao/cocoa powder (or to taste) and 2-3 table spoons of honey (or less if you prefer less sweet) and mix until smooth, in the meantime melt down 1-2 table spoons of coconut oil in the microwave, and pour in whilst the ingredients are still mixing. Mix until smooth and spoon into containers or dishes. You can eat it straight away or place in the fridge for an hour or so making it set a bit more.
